Apple & Pecan Muffins


1 apple
1 cup or 250g rolled oats
⅓ cup or 85g pecans
⅓ cup or 85g sultanas
1 egg
1 teaspoon cinnamon
½ teaspoon baking soda
½ teaspoon salt
½ cup brown sugar
1 cup or 250g all-purpose flour
1 teaspoon vanilla extract

How to make it

Pre-heat the oven to 180°C (fan-forced). In a small bowl, combine the sifted flour, baking soda, cinnamon and salt. Stir well.

Grate apples and roughly chop nuts and place in a separate bowl. Add oats, vanilla extract, sultanas, Pauls Full Cream Milk, sifted brown sugar and beaten egg. Mix together well.

Combine all the ingredients into one large bowl by folding the dry ingredients through the wet mix. Using paper muffin cups inside a muffin tray, evenly pour the mixture into the cups. Place into the oven and cook for 15-20 minutes or until a skewer inserted into the centre of a muffin comes out clean.

Remove from the oven and allow to cool for 5 minutes. Serve with butter, your favourite jam or some Pauls Whipped Cream.
